1 1/4 cups spelt flour
1 T baking powder
1/2 tsp salt
1 T Sugar
2 T olive oil
1 cup milk (or 1/3 cup of powdered milk and 1 cup water)
1 egg
Mix ingredients together and let sit a minute. It allows the spelt time to absorb some of the moisture. Pour 1/4 cup at a time on a hot griddle, about 350*. Flip when edges start to curl up or bottom is golden brown.
