We do not source spelt out from other growers. Harvest is in September, usually, and cleaned spelt is ready to be shipped out in October.

WHAT IS SPELT?

Spelt is an ancient NON-GMO grain that is slowly making a come-back in the United States. It has many properties that people are looking for: for one, it tends to be easier to digest and doesn't cause uncomfortable bloating that some people experience when they eat hard red or hard white wheat. This is because spelt is more water-soluble - meaning it breaks down easier in your body.

Some people who are sensitive to wheat have been known to be able to use spelt in their diets. Note: Spelt is not gluten free, but the gluten will break down easier in your body.

BETTER THAN ORGANIC?

Just because something says it is organic, doesn't mean there were no chemicals used growing it, and reports say those organic chemicals are more toxic than conventional ones.

We use an early herbicide, just to hold back the weeds so we actually have a crop to grow and don't mix our spelt with wild oats or something else that would contaminate it. We also use fertilizer (it's like taking vitamins) to maintain soil and crop health. Sometimes, when the plant is deprived of nutrients, it will make its own toxins, so we had our spelt tested and it came back clean with the report "no detection" from the Food Lab we sent it to. They conducted a thorough test to make sure it was clean from any chemical residue. Rest at ease when you buy from us. We will continue to test it to ensure the highest quality we can provide.

HOW DO I USE SPELT?

Spelt is fairly easily substituted into most recipes calling for flour. So, don't throw away your old recipes that you loved and think you'll never enjoy again. It just might take a few minor adjustments and a little practice.

WHY IS OUR SPELT BETTER?

We make sure it is triple-cleaned, GMO-free, Maverick variety Spelt - perfect just for baking and sprouting. It is also irrigated - which makes a huge difference when you try to grind it into flour. Irrigated spelt will maintain consistent, plump kernals with a bit less bran while non-irrigated spelt, or dry-land grown spelt, will have a higher protein, but will have more bran - meaning you could have more shrunken kernals and it may tend to gum up your grinder a little more. They also tend to be a little more "tough."

We sell our Idaho-family-grown spelt in 50 pound bags of whole spelt kernels (berries). You will need a grain mill to make flour with your spelt or wheat. When you grind spelt into spelt flour, it is naturally light in color and ready for baking. Spelt flour is best kept in a cool, dark place to maintain its excellent nutrient value.

We repeatedly average a protein count of 13, which is great for baking and creating a consistent product.

p.s. We have discontinued carrying spelt flour. It is better to mill your own. So if you need a grain mill, please check out the quality mills we carry.

I also wanted to say your spelt is DELICIOUS!! I didn't think there would be such a difference in taste but there is a HUGE difference. I noticed immediately when we opened a bag that the color was lighter and the berries felt softer than the Spelt we have gotten elsewhere. I just had to nibble on them and I was shocked that they are soft (not the hard crunch that I was used to) and the flavor floored me! It does not have that somewhat bitter after-taste that our other spelt does.

I made bread this morning, and I am completely amazed!! I used the same recipe I have been using for years in my spelt bread-no variation except for the grain but there is a big difference in my bread. It is so light and fluffy, amazing where my bread is more dense-I figured that was just how spelt bakes (my grain has all come from the same place)-but not your spelt! It bakes up so nicely!! So smooth and light. This is THE BEST bread I have ever made. (I'd even wager it is better than any wheat bread). This does not taste like spelt. It does not have that somewhat bitter after-taste, or that tangy hint to it...that I am so used to. (My other spelt I bought was organic- I am so shocked that it would really be such a difference in your spelt variety). My 9 yr old daughter said the bread almost had a sweet taste to it. And the only difference there was in baking the bread was the grain I used. Again I am just so pleased with your grain!! I am so excited to try out my other recipes and see the difference. I am afraid we are going to eat through our 10 bags too quickly (Smile).
